Do you ever get sick of cooking the same meals over and over again? I feel like I eat the same thing every week so today we decided to spice things up a bit. I went to Shoprite and bought 24 little neck clams and made some Italian bread. I also made a quick salad just to have a little something extra. This is a very flavorful and different dish. Love it!!!! Continue reading
Irish Soda Bread
Yes, I know St. Patrick’s Day is over, but I really wanted to put this recipe up because it is so easy and it tastes so amazing. I’m actually going to make this for Easter. It will go great with the salty ham. My mom asked me to make a loaf for her job…she put it out at 9:00am and it was gone by 10:00am!

Chicken and Spaghetti in Peanut Sauce
There are so many recipes I find that I don’t have all the ingredients or I have never heard of the ingredients. Sometimes you have to be creative and put your own flare on things. I kind of did my own thing with this recipe and it is now one our favorites. Sorry, no story with this one….just an awesome recipe. Continue reading
The Bread Man
For as long as I can remember, we bought our bread at the supermarket. We grew up on Wonder Bread…it sure is a wonder that it was called bread. Then later on in life, we started buying Martin’s Potato Bread. Below are the many ingredients in potato bread….even yellow #5 and #6. Continue reading
Psycho Tacos
Have you ever been stuck for what to make for dinner so you throw a bunch of ingredients together and hope for the best. Sometimes you’re a mad scientist and it’s really bad and then there are the times that you are a genius and it tastes great! I have definitely been the mad scientist, where you sit there and eat this horrible concoction and you keep trying to tell yourself it’s not so bad. So this one time, I got lucky. I threw together so much stuff and it actually came out awesome and is now something my husband requests. We call it Psycho Tacos! Continue reading
Cajun Chicken Salad
A lot of people that I speak with that are trying to lose weight think they are doing the right thing by eating a salad when they go out to lunch or dinner. What they don’t realize is that salads in places like Chili’s as an example have tons of extra calories, fat, preservatives and salt. The ingredients that these restaurants use are low quality so they can make the most profit. Needless to say, I’m sure people making your salad aren’t following the strictest sanitary rules either. Let’s take a peak at Chili’s Chicken Caesar Salad….sounds safe and healthy right? Continue reading
Ski and freeze or massage?
When most of us think of health, we think about eating healthy and exercising. What we forget about is mental health. You can eat all the nutritious food you want and exercise regularly, but if your mental health is off from stress or worrying, you cannot be truly healthy. When you have high stress levels, your body does not absorb nutrients properly and healthy intestinal bacteria is destroyed. Continue reading
Roasted Chicken with Potatoes
A lot of people seem to over complicate their meals. They eat processed food that has a million ingredients they can’t pronounce and call it a meal. Sometimes you just need to take a step back and simplify things. I named my company Simply Nutrition Health Counseling because I want to make being healthy simple. I don’t ask my clients to count calories or points or weigh their food. Eating should not be a full time job. You should enjoy eating and it should be easy! Continue reading
Blueberry Pancakes
Let me start out by saying I know pancakes aren’t healthy. but if you eat Bisquick pancakes with Aunt Jemima syrup and butter, then this is a healthy alternative. We’re going to make homemade blueberry pancakes with maple syrup and organic butter. I grew up on Bisquick pancakes and yes they taste great, but the ingredients aren’t so good….just like with many foods that taste great. My dad would make them on Saturdays mornings and we used to get so excited for pancake day. We used Aunt Jemima syrup too. Continue reading
Easy homemade tortillas
I used to buy Mission flour tortillas until I got all crazy healthy. It’s funny, before I studied nutrition I would just throw products into my shopping cart without giving any thought as to what they were made of. Doritos….awesome….Hostess Cupcakes….hell yea…..hot dogs….the more the merrier. As you hear about more and more people with weight issues, cancer, diabetes, heart disease and so on, you start to wonder….is it all the bad ingredients people are eating that is contributing to all these problems. The answer is YES! Chemicals and preservatives don’t belong in your body. I understand it’s almost impossible to eliminate all pre-packaged food from your diet, but if you just start somewhere and make one healthy change at a time…. you’ve made a step in the right direction. I didn’t become healthy overnight and I still have changes that need to be made, but I’m on the right track. Continue reading
