There are so many recipes I find that I don’t have all the ingredients or I have never heard of the ingredients. Sometimes you have to be creative and put your own flare on things. I kind of did my own thing with this recipe and it is now one our favorites. Sorry, no story with this one….just an awesome recipe.
3 tbsp soy sauce plus 1 tsp later
1 tbsp olive oil plus 1 tbsp later
4 cloves minced garlic
3/4 tsp ground ginger
1/2 cup peanut butter
1 cup chicken broth
1 package of skinless chicken breasts (thinly sliced)
1 small onion slices
1 small red pepper sliced
1/2 tsp sugar
1/2 tsp salt
1/8 tsp red pepper flakes
3/4 lb spaghetti
3 scallions chopped
In a zip lock bag, combine 3 tbsp soy sauce, 1 tbsp oil, garlic, ginger and chicken. Let marinate at least 10 minutes.
In a medium sauce pan, combine 1 tsp soy sauce, peanut butter, broth, sugar, salt and red pepper flakes. Pour the marinade from the chicken into the saucepan and simmer, while whisking until smooth. Sometimes I add a little more chicken broth because I like my food really saucy. Set aside.
Heat a grill pan with 1 tbsp of oil oil. Cook chicken until browned on both sides. Set chicken aside and cut into bite sized pieces. In the grill pan, saute onions and red peppers. Add back the chicken to the grill pan. Add in scallions.
Drain the pasta and mix with the peanut sauce, then add everything from the grill pan.
